Banana Oat Muffins

Ok, I made some banana-oat muffins this morning, and they are AMAZING.  I don't know where I got this recipe, but I've made it a few times, tweaking it a little every time, and this time, I think I got it just right.


I usually do not like baked banana goods that I make.  For some reason, my banana bread always comes out dense and way too banana-y, and it generally makes me feel sick.  I think its usually because there is too much banana in the recipes I have used in the past, and so it doesn't get dried up enough.  But these have the perfect ratio of moistness and dryness.  Especially with a hot caramel latte. 


Now you will probably make them and not like them, because I've hyped them up too much.   OH WELL.  I will still enjoy my muffiney-goodness.  I've made the .pdf available for download here or on my "projects and tutorials" page.

I found this recipe the other day and made the muffins this morning. They are WONDERFUL! Thank you for posting this! My 10 year old daughter gobbled up 2 of them right away. =)
